Pesto & Pineapple Tomatillos

Last week my advisor group and I whipped up a batch of pesto using the basil and garlic we harvested from the garden.  This kids did a great job, stayed focused and even did an amazing job cleaning up (yay!).Making Pesto

We froze the pesto in ice cube trays and plan to use it tomorrow to make some pesto pizza and conduct a taste test experiment!

The other news is that we harvested almost everything from the garden last Friday! With all the rain we had last week we hadn’t been out in the garden at all. Then Friday morning, someone casually mentioned that we were supposed to get a hard frost. WHAT? AHH! I had not even been paying attention to the weather! Luckily, my first period class was ahead of the game….and it hadn’t started to rain again (yet)! So we broke into groups, divided the tasks and headed outside on a mission! We harvested all the beans, tomatoes, tomatillos, basil, lettuce, sunflowers, zucchini, hot peppers and squash we could carry. Much of it got taken to the cafeteria, some put in the fridge, some was eaten immediately and some was taken home. The tomatillos and onions will make a debut tomorrow when we make some yummy green salsa!

One thing we discovered on our “pick everything while you still can foray” was that the pineapple tomatillo plant actually had a few pineapple tomatillos that were ready to eat. Now, this is not something I had tried before but was told by a certain 8th grade teacher that they are “amazing”. She started some seeds for us and two of them survived the spring planting in the garden.  When I had looked at them before it seemed that they were not ripe, however, we realized that the ones that were ripe had dropped to the ground. So, some of us decided to try them (after we had tried the spicy nasturium….kids love it that you can eat flowers!). We were a little hesitant but instantly there were sounds of, “ummmm”, “good” or my favorite, “this tastes like fruit punch”! My class LOVED them! We picked as many as we could find and decided we were going to plant them next year, just start them a little earlier so we can have a bumper crop!
